Ingredients
Beef - 2 lb
(cut into small cubes)
Red onions(large) - 2 nos
(cut into thin, long pieces)
Green chillies(large) - 4 nos
(split ino two)
Ginger - 25 gm
(finely chopped)
Garlic pods(large) - 5 nos
(cut into thin, long pieces)
Cinnamon(Karugapatta) - 2 sticks
(broken into 2 - 3 pieces)
Fennel seeds(Perinjeerakam) - 1 tbsp
Black pepper powder - 1 tbsp
*Coconut flakes(Thenga khothu) - 1 1/2 cups
Coconut oil - 1 cup
Curry leaves - 3 stem
Salt - 1 tbsp
Turmeric powder - 1 tsp
Coriander powder - 2 tbsp
Meat masala powder - 3 tbsp
*Using a small, sturdy knife, pry out the coconut meat from the shell.
It will come out in pieces, but try to keep them as large as possible.
Coconut flakes(Thenga khothu) can be made by cutting out thin strips (about
a 1/4" thick) of coconut and slicing it into small chips.
Preparation Method
1)Mix together turmeric powder, coriander powder, about 2 tbsp of meat
masala powder and about 1 tbsp salt into a thin paste.
2)Rub the mixture into the cubed meat thoroughly and set it aside for about an hour.
3)Heat about 3/4 of the coconut oil in a cooking pot on a medium flame.
4)When the oil is hot, add the chopped ginger and garlic and saute.
5)Add fennel seeds and broken cinnamon sticks to the mixture and saute.
6)Add split green chillies and saute.
7)Add the shredded onions to the mixture and saute, till they turn yellow.
8)Add the marinated beef to the mixture and stir, till the mixture is even.
9)Add the coconut flakes to the mixture and stir again, till the mixture is even.
10)Add about a cup of water to the mixture and cover the pot.
11)Allow the meat to cook for about 10 mins on a low-medium flame.
:- Check once in a while to make sure that there is just enough water so that the pot is not dry.
12)Once the meat is cooked, take the pot off the stove.
:- The meat doesn`t need to be well done at this stage.
13)Heat the remaining oil in a frying pan.
14)Add the curry leaves and saute, till it breaks out.
15)Add black pepper powder and the rest of the meat masala and saute.
16)Add the contents of the pot into the frying pan and stir.
:- Check the level of salt and add more, if required.
17)Stir roast the mixture over a low-medium flame, till the mixture turns dark.
:- Do not allow the meat to burn.
:- Serve hot with bread or chappathis.
