Meat Pappas Recipe


Ingredients
Meat - 1 kg
Ginger - A small piece
Onion(large ) - 1 no
Garlic pods - 6 nos
Green chillies - 6 nos
Curry leaves - A few
Oil - As reqd
Chilly powder - 1 tsp
Turmeric powder - 1/2 tsp
Pepper(ground) - 1/2 tsp
Ginger-garlic paste - 2 tsp
Coriander powder - 3 tsp
Vinegar - 2 tsp
Yoghurt/Curd - 2 tbsp
Salt - As reqd
Coconut milk - 1 cup

For masala:
Cinnamon(Karugapatta)
Cardamom(Elakka)
Nutmeg(Jathikka)
Pepper(Kurumulaku)
Fennel(Perinjeerakam)
Cloves(Grambu)
Bay leaves(Vazhana/Karuga ela)
Mustard
Bark of drumstick tree(Muringa tholi)
Preparation Method
1)Grind together all the spices and add ginger-garlic paste and grind once again with vinegar.

2)Cut meat pieces as thin as 3 inches long and square shaped.

3)Cook the meat with ground spices, till done.

4)Heat oil in a pan.

5)Fry onions, ginger, garlic and curry leaves.

6)Make wet masala out of chilly powder, turmeric, coriander powder and pepper and roast it.

7)Add meat pieces and mix well.

8)Add coconut milk, vinegar and salt.

9)When the gravy is thick, remove from fire.
