Ingredients
Chicken(with bones) - 1 kg
or
Mutton - 1 kg
Onion(big) - 1 no
(sliced)
Green chillies - 2 - 3 nos
Curry leaves - 1 stalk
Tomato(big) - 1 no
or 2 small ones
Cinnamon(Karugapatta) - 4 sticks
Cardamom(Elakka) - 2 nos
Cloves(Grambu) - 4 nos
Whole coriander seeds - 3 tbsp
Dry red chillies(Kollamulaku) - 4 nos
Coconut pieces - 6 - 8 nos
Peppercorns(Kurumulaku) - 8 nos
Masala powder - 1 - 2 tbsp
(any chicken or mutton masala powder)
Garlic pods - 8 nos
Ginger - 2" piece
Small onion(Kunjulli) - 3 - 4 nos
Fennel seeds(Perinjeerakam) - 1/2 tsp
Poppy seeds(Khashakhasha) - 1/2 tsp
Coconut oil for cooking
Turmeric powder - 1 1/2 tsp
Salt - As reqd
Coriander leaves for garnishing Preparation Method
1)Clean and cut chicken into small pieces.
:- If using mutton, then cook it in a cooker with some turmeric powder,
ginger, salt and water.
2)Heat up a pan or a kadai.
3)Add cinnamon, cardamom, cloves, coriander seeds, dry red chillies,
coconut pieces, peppercorns, masala powder, garlic, ginger, small onions,
fennel seeds and poppy seeds one by one.
4)Fry them on a medium flame, until it starts to emit a nice aroma.
5)When they turn red in colour, switch off the flame.
:- Don`t fry too much and burn everything as it will spoil the taste
of gravy.
6)Grind the above into a smooth paste adding sufficient water.
7)Heat oil in the same pan or kadai.
8)Add onions and curry leaves and saute.
9)Add green chillies followed by tomato and fry for a while.
10)Add drained chicken or mutton.
11)Add turmeric powder and salt.
12)Add a little water and mix well.
13)Cook for 10 mins.
14)Add the masala paste and mix well.
15)Cover and cook for 15 mins.
16)Remove the lid and cook on a medium flame, until the oil comes on
top and the gravy becomes thick.
