Ingredients
Basmati rice - 2 cups
Chicken - 1/2 kg
(cut into small pieces)
Onion - 2 nos
Tomato - 2 nos
Ginger (paste or small pieces) - 1 tsp
Garlic (paste or small pieces) - 1 tsp
or
Ginger-garlic paste - 1 1/2 tsp
Chilly powder - 3/4 tsp
Coriander powder - 2 tsp
Turmeric powder - 1/4 tsp
Curd - 1/4 cup
or
Lemon juice - 1/2 tsp
Mint leaves(Pudhina) - 12 leaves
Coriander leaves - 1/2 bunch
Green chillies - 4 nos
Oil or Butter or ghee - 5 tsp
Cashewnuts - 10 nos(optional)
Cloves(Grambu) - 6 nos
Cardamom(Elakka) - 5 nos
Cinnamon(Karugapatta) - 2 sticks of 1" length
or
Masala powder - 1 tsp flat
(Cloves, Cardamom, Cinnamon)
Rose essence - 1/2 tsp
Salt - As reqd
Preparation Method
1)Keep the rice soaked in water, until it is ready to be added to the
pressure cooker.
2)Heat oil or butter or ghee in a pressure cooker.
3)Saute ginger and garlic.
4)Add onion and saute well.
5)When onion turns golden, add chilly powder, coriander powder, turmeric powder, cloves, cardamom and cinnamon(whole or powder) and saute.
6)Add tomato and green chillies and saute.
7)Add curd or lemon juice to this paste and mix well.
8)Add salt.
9)Add chicken pieces and mix well.
10)Cover the pressure cooker with a lid and cook the chicken for 15 mins on medium-high heat, mixing in between.
:- 15 mins is enough for boneless chicken. Chicken with bone might need more time. I am assuming that chicken is half cooked by doing this, allowing the rest of the cooking to happen with the rice under pressure.
11)Drain the rice and keep it aside, while chicken is getting cooked.
12)After 15 mins., add mint leaves, coriander leaves, cashew nuts, drained rice, rose essence and mix well.
13)Add 3 cups of water and mix well again.
:- For 1 cup of rice, add 1 1/2 cups of water.
:- Check the level of salt and add, if reqd.
14)Cover the pressure cooker with its lid.
15)Put the pressure regulator weight on the lid.
16)Pressure cook upto 1 whistle.
:- If you are using an electric stove, remove the cooker from the stove`s
electric plate to a cool plate/place. Otherwise, rice will be overcooked.
