Ingredients
Basmati rice - 2 cups
(soaked and drained)
Ripe tomato(medium) - 3 - 4 nos
Spices:-
Cardamom(Elakka) - 3 - 4 nos
Cloves(Grambu) - 5 - 6 nos
Cinnamon(Karugapatta) - A few pieces
Peppercorns(Kurumulaku) - A few
Salt - As reqd
Raisins(Onakka munthiri) - As reqd
Cashewnuts - As reqd
Ghee - 4 tbsp
Coriander leaves(chopped) - A few Preparation Method
1)Blend the tomatoes in a mixer grinder to make a puree. Keep it aside.
2)Heat 2 - 3 tbsp of ghee in a pressure cooker.
3)Add all the spices and allow them to splutter.
4)Add the tomato puree and stir well.
5)Stir, till the puree starts to thicken.
:- Do not reduce it too much.
6)Add the drained rice and mix well.
7)Add 3 1/2 cups of water and mix well again.
8)Add reqd salt and mix well.
9)Close the cooker with its lid and pressure cook upto 2 whistles on
high flame.
10)Fry the raisins and cashews in the remaining tbsp of ghee.
11)After opening the cooker, add the above fried items along with the
chopped coriander leaves.
12)Mix everything well.
:- Serve with any curry or salad and pappadum.
:- If u wish, you can add vegetables like beans, carrot and cauliflower
along with the rice. Then, u need to add 4 cups of water.
:- Even if u r not using veg, u can add upto 4 cups of water if u want
the rice to be really cooked.
