Yummy Egg Burji Recipe


Ingredients
For chutney:
Small onions - 4 nos
or
Onion(big) - 1/2 cup
(chopped)
(You can use big onion in case u want the dish to be less spicy or can use a mixture of 2 small onions and a lil bit of big onion.)
Red chilly(whole)(Kollamulaku) - 1 - 2 nos or as reqd
Salt - As reqd
Oil

For egg burji:
Above chutney - 1 - 1 1/2 tbsp
Eggs - 2 nos
Salt - As reqd
Pepper - As reqd
Oil
Preparation Method
1)Heat oil in a pan or a kadai.

2)Add the whole chillies and the onions and fry, till the onions become glazy.

3)Remove from the heat and let it cool.

4)After it has cooled, add salt and grind to a fine paste in the grinder for a few minutes.

:- Make sure the mixture is cool before grinding in the grinder. Otherwise, it could spoil the grinder.

5)Take the onion and chilly mixture from the grinder and add one tbsp of oil and mix it well.

:- This is a very yummy chutney by itself and you can serve with dosa or idli.

6)Take eggs and break into a bowl.

7)Add salt and pepper.

8)Add 1 - 1 1/2 tbsp of the above chutney and beat it well.

9)Heat oil in a pan or a kadai.

10)Add the egg mixture and scramble it with a fork.

11)When done, remove from the flame.

:- Serve hot with chappathis.
