Egg Aviyal Recipe - How to Cook

Ingredients
Eggs - 2 nos
(boiled and cut into 2 pieces)
Potato - 1 no
(cut into small pieces)
Green chillies - 2 nos
Small onions(Kunjulli) - 5 nos
Tomato
Red chilly powder - 1/2 tsp
Pepper powder - 1/4 tsp
Cumin seeds(Jeerakam) - 1/4 tsp
Ginger(chopped) - 1/2 tsp
Turmeric powder - 1/4 tsp
Grated coconut - 1/2 cup
Curd - 1 tbsp
Curry leaves - A few
Salt - As reqd
Oil - As reqd
Preparation Method
1)Grind together coconut, cumin seeds and green chillies.

2)Heat oil in a pan or a kadai.

3)Add curry leaves, chopped onion and ginger and allow it to turn brown.

4)Add tomato and cook it.

5)Add potato pieces.

6)Add coconut paste and cook, till the potatoes are done.

7)Add boiled egg, pepper powder, curd and salt.

8)Turn off the flame and sprinkle curry leaves on top.
